Carrots are a staple in our home, and one of my favorite way of having them is this brown sugar glazed carrots recipe from Martha Stewart on Youtube. It’s an easy and classic side dish, especially on holidays; it just gives that comforting feeling over the dinner table. What I like the most about this dish is that despite being so simple, it tastes so delicious! It complements almost all entrees, so it is a good choice for a holiday feast or large dinner party. Ingredients:

  • 2 tbsp extra-virgin olive oil
  • 1 to 1 1/2 lb carrots with tops, peeled and halved lengthwise, 1/3 cup tops coarsely chopped and reserved
  • coarse salt and freshly ground black pepper
  • 2 tbsp packed light brown sugar
  • 1 tbsp molasses
  • 1/4 cup grapeseed oil
  • 1 1/2 tbsp unsalted butter
  • 1 sprig of fresh rosemary

Directions:

Step 1

To start, prep your carrots. Peel and halve them lengthwise, all in the same sizes. Set them aside. Next, in a large skillet over medium heat, add 2 tbsp olive oil, then add the carrots. Season with some salt and ground black pepper, then stir the carrots around to coat them with oil. After three minutes or so, add 2 tbsp brown sugar, 1 tbsp molasses, and a little bit of water just to prevent the sugar from sticking. Continue to cook until the carrots are tender and the sauce is thick.

Step 2

While the carrots are cooking, add 1 sprig of fresh rosemary and a small piece of butter. Stir it and once the butter has melted, remove them from the pan, and transfer them to a serving plate. Serve and enjoy!
