Ingredients:

Marinade:

  • 1 cup water
  • 1 cup red wine vinegar
  • 2 tbsp brown sugar
  • 1 tsp fresh rosemary, chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 pinch red pepper flakes, optional
  • 4 large onions, halved

Roasting:

  • 4 tbsp butter
  • 1 tsp fresh rosemary, chopped

Directions:

Step 1

Combine 1 cup of water, 1 cup red wine vinegar, 2 tbsp brown sugar, 1/2 tsp kosher salt, 1/4 tsp ground black pepper, 1 tsp fresh rosemary, and 1 pinch red pepper flakes. Mix well and pour it on a casserole dish. Next, add the halved onions, cut side down. Cover the casserole dish with plastic wrap and marinate the onions overnight.

Step 2

(Preheat the oven to 400 degrees F at this point.) After marinating, flip the onions up, then place 1/2 tbsp of butter on each top.  Add some rosemary, then roast it in the preheated oven for one hour or until golden brown, basting once or twice during roasting time. Once done, transfer to a serving plate, drizzle with the sauce, and garnish with more rosemary. Serve and enjoy!
