Rum Soaked Pineapple Upside-Down Cake Recipe

I just love Malibu Rum, so when I found this Malibu Rum pineapple upside-down bundt cake by Alicia Lynn, on YouTube, I had to make this for my husband for his birthday surprise. My husband loves Malibu Rum also, so I planned a very small house celebration, with a rum punch, some pineapple roasted pork, and of course this delicious cake. I was so excited about the stunning appearance of this cake and the ingredients were all things I already had in the pantry!

Ingredients For Malibu Rum Pineapple Upside-Down Bunt Cake:

• 1 can of pineapple tidbits (or rings)
• 1 (8 ounce) can of crushed pineapple
• Maraschino cherries
• 1 3/4 cups butter (softened)
• 8 ounces of softened cream cheese
• 2 cups of packed light brown sugar
• 1 1/2 cups of white sugar
• 3 cups of flour
• 6 large eggs
• 1/4 cup Malibu Rum (or other alcohol that you like)
• 1 teaspoon of vanilla
• 1 1/2 teaspoon of baking powder
• 1/2 teaspoon of salt
• A greased bundt pan

Then, you will let the cake cool in the pan for at least 25 minutes, then carefully remove it. Make your delicious boozy glaze and pour all over the top, and the cake will be ready to serve.

This cake is so delicious, my husband loved it, and it made his birthday wonderful.
