I just love Malibu Rum, so when I found this Malibu Rum pineapple upside-down bundt cake by Alicia Lynn, on YouTube, I had to make this for my husband for his birthday surprise. My husband loves Malibu Rum also, so I planned a very small house celebration, with a rum punch, some pineapple roasted pork, and of course this delicious cake. I was so excited about the stunning appearance of this cake and the ingredients were all things I already had in the pantry!

- 1 can of pineapple tidbits (or rings)
- 1 (8 ounce) can of crushed pineapple
- Maraschino cherries
- 1 3/4 cups butter (softened)
- 8 ounces of softened cream cheese
- 2 cups of packed light brown sugar
- 1 1/2 cups of white sugar
- 3 cups of flour
- 6 large eggs
- 1/4 cup Malibu Rum (or other alcohol that you like)
- 1 teaspoon of vanilla
- 1 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- A greased bundt pan
