I just love Malibu Rum, so when I found this Malibu Rum pineapple upside-down bundt cake by Alicia Lynn, on YouTube, I had to make this for my husband for his birthday surprise. My husband loves Malibu Rum also, so I planned a very small house celebration, with a rum punch, some pineapple roasted pork, and of course this delicious cake. I was so excited about the stunning appearance of this cake and the ingredients were all things I already had in the pantry!

Ingredients For Malibu Rum Pineapple Upside-Down Bunt Cake:

  • 1 can of pineapple tidbits (or rings)
  • 1 (8 ounce) can of crushed pineapple
  • Maraschino cherries
  • 1 3/4 cups butter (softened)
  • 8 ounces of softened cream cheese
  • 2 cups of packed light brown sugar
  • 1 1/2 cups of white sugar
  • 3 cups of flour
  • 6 large eggs
  • 1/4 cup Malibu Rum (or other alcohol that you like)
  • 1 teaspoon of vanilla
  • 1 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • A greased bundt pan
