Cook the bacon in a pan, then add the brussel sprouts, salt, pepper, apple cider vinegar, brown sugar, and minced garlic. Mix until well combined. Cook until the brussel sprouts are a little bit browned. Bake at 400F for 20 minutes, mixing every 5 minutes. Sprinkle 1 cup of parmesan cheese on top then bake again at 400F for 4 minutes. Sprinkle crispy bacon bits and chives on top.
Filling:
Add the potatoes and salt in a pot and fill with water. Cook until fork tender, then drain and cool. Slice into halves and scoop a teaspoon on the halves to make them look like eggs. Add all the filling ingredients in a bowl and mash with a fork until well combined. Transfer to a piping bag or plastic, and squeeze to each hole on the potatoes. Sprinkle crispy bacon and chives on top.
Separate the stems and the head of the mushrooms. Chop the stems and fry in a pan with garlic, salt, and pepper. Transfer to a bowl, then add cream cheese, whole wheat bread crumbs, parmesan, parsley, salt, and pepper. Mix well. Place the head of the mushroom on a baking tray, right side down, then fill the top of each one with the mixture, followed by grated cheese. Bake at 350F for 20 minutes.
