Ingredients:

  • 4 zucchinis, sliced ¼ inch thick
  • 1 (24 oz) jar pasta sauce, homemade or store-bought
  • 6 ounces mozzarella cheese, shredded
  • 2-3 tablespoons basil, thinly sliced

Filling

  • 3-4 tablespoons olive oil
  • 10 ounces fresh spinach leaves, roughly chopped
  • 1 clove garlic, grated
  • 8 ounces cream cheese, softened at room temperature
  • 8 ounces feta cheese, crumbled
  • 1 teaspoon dried dill
  • Salt and black pepper, to taste
  • A pinch of crushed red pepper flakes

Directions:

Step 1

Preheat your oven to 400°F or 200°C, then chop off each end of every piece of zucchini, and slice them thinly. Place the zucchini slices on a baking tray, brush with olive oil, lightly season with salt and pepper, flip, then oil, and season the other side. Let it rest for about 10 minutes while preparing the rest of the ingredients. To make the filling, start by heating up the olive oil in a skillet, then add the garlic, and let it cook for a few seconds before adding the chopped spinach. Let it cook until it wilts while stirring constantly, then season it with slat and pepper before removing it from the heat and adding the dill. Add the cream cheese, then give them a good mix until it softens and melts into the spinach. Crumble the feta cheese, then add it to the mixture, and mix until well combined. Taste and adjust the seasoning if needed.

Step 2

Once the filling is ready, assemble the zucchini rolls. Spread about a tablespoon of the filling over each zucchini slice, and roll each of them up. Pour about 2 to 3 cups of tomato sauce into the bottom of a 9 by 13 inches baking pan, then place the zucchini rolls on top of the sauce, and spoon some more sauce on top of the zucchini rolls before topping them with mozzarella cheese. Put them in the center rack of a preheated oven and let them bake for about 20 to 25 minutes. Turn the broiler on during the last 4 to 5 minutes so that the cheese will turn bubbly and browned. Allow the zucchini rolls to sit at room temperature for 15 to 20 minutes before serving to let them set, then serve with a salad and toasted bread, and enjoy!
