Squash and zucchini is a popular vegetable in the summer. It’s hard for some people like kids to eat vegetables, but if you cover it up with cheese and butter, it seems to be more appealing. There are so many friends that I have who dislike vegetables and tell me they will only eat it if it’s drowned in cheese. This low-carb squash and zucchini gratin is basically a casserole. The Hungry Hussey’s tutorial on YouTube is super simple and keto-friendly. I love how it’s a low-carb dish and it can be a great side dish to pair with a protein. This dish looks super fresh and creamy. Plus, it works well if you have a lot of zucchini and squash in the fridge from the garden or store.
First, start off slicing the squash and zucchini into thin slices. Also, dice up your onions to add into your gratin.
Next, spray the pan with cooking oil. Lay the zucchini and squash stacked in a pattern while alternating them into the pan. Sprinkle the diced onions on top of the zucchini and squash. Make the sauce over the stovetop and pour over the vegetables.
This is truly a keto dish, and I can see it being popular for those that are practicing that diet. There are so many people who do not like zucchini and squash, but I’ve changed their minds about it. I would love to try this recipe out because it is a great way to try something different. It’s vegetarian-friendly too and it would be nice to try making an all-veggie casserole.
