These low-carb fried mac and cheese patties by RuledMe on YouTube are healthy and keto-friendly for those that are watching their carb intake. Honestly, anything fried and cheesy sounds amazing. I love cauliflower mac and cheese but I’ve never had them in a snack-like patty form. It would be interesting to see what these would taste like. They look nice and golden brown. This is a perfect recipe for those that are vegetarians and serve as their main protein to go along with other sides. Also, I think it would be a great alternative for a guilt-free snack without all of the carbs that macaroni noodles consist of.



  • 1 Head Cauliflower, Riced
  • 1 1/2 Cup Shredded Cheddar Cheese
  • 3 large Eggs
  • 2 tsp Paprika
  • 1 tsp Tumeric
  • 3/4 tsp Rosemary


First, prep the cauliflower by cutting them into florets and taking any excess stem off. Add the cauliflower to a food processor and pulse until it is the consistency of short-grain rice. Then, transfer them to a microwave-safe bowl and microwave them for 5-7 minutes. Get all of the excess moisture out by wringing it out with a towel. Next, once the cauliflower mixture is mixed with the spices and cheese, add the patties to a skillet into hot oil on medium-high heat. Allow them to crisp on one side before flipping it over. Continue to crisp them on both sides.
