In a big bowl, add the ground beef, breadcrumbs, french onion soup mix, ground mustard, egg, and Worcestershire sauce. Mix everything with a silicone spatula until well combined. Do not use your hands as it will melt the meat.
Form the ground meat into 4 patties.
Place a pan over medium to medium-high heat, and drizzle some olive oil. Once hot, add the patties and cook until browned for about 1 to 2 minutes per side. Transfer to a plate then cover.
In the same pan, add the butter, onion, and mushrooms. Saute over medium to medium-high heat for 10 minutes. Scrape the bottom of the pan while cooking. Add finely minced garlic. Saute for about 2 minutes.
Add red wine to the mushrooms and cook until it’s reduced for about 10 minutes.
Make a well in the center. Add 3 tablespoons of butter and 3 tablespoons of flour. Stir until well incorporated then slowly mix in the onion, garlic, and mushroom mixture. Cook for about 2 to 3 minutes.
Add beef broth and turn the heat to medium to medium-high. Bring it to a simmer and scrape the bottom of the pan.
Add the Worcestershire sauce, low-sodium soy, and ketchup. Whisk until well combined. Bring it to a simmer.
Once it comes to a simmer, place the hamburger steak into the sauce. Reduce it for 10 to 15 minutes. Flip the burgers now and then to make sure it’s cooked through.
Season with salt and pepper. Mix and serve. Enjoy!
