This homemade dip is always a hit whenever I serve it at a party. Everyone just couldn’t get enough of how delicious it is. You can serve it with tortilla chips, crackers, pretzels, and bread, use it as a sauce for fries, hot dogs, or burgers, or use it as a topping for nachos, fries, or baked potatoes.

Easy Loaded Rotel Dip Ingredients

  • 8 strips julienne sliced bacon
  • 1 pound ground beef
  • 2 cups of yellow onions
  • 3 finely minced garlic cloves
  • 1 pound full-fat cream cheese
  • 2 pounds of Velveeta cheese
  • 2 cups of diced Roma tomatoes (seeds removed)
  • 1 small jalapeño (pithed, seeded, and diced)
  • 1/2 cup of amber ale beer
  • juice of 1 lime
  • 1 bunch of thinly sliced green onions
  • 1/4 cup of finely minced fresh cilantro

How to Make Loaded Rotel Dip

Step 1:

In a large non-stick pan, add sliced bacon and cook over low to medium heat until crisp. It will take about 8 to 10 minutes. Set aside the crispy bacon, then pour the rendered bacon fat through a strainer into a medium-sized bowl.

Step 2:

In the same pan, add 2 tablespoons of the rendered bacon fat, then heat up over medium-high heat until it begins to smoke lightly.

Step 3:

Add the ground beef and flatten it out to make a large disk. Cool it untouched for 3 minutes.

Step 4:

After 3 minutes, break up the ground beef into small bite-size pieces, then cook until browned and cooked through. Set aside in the bowl with bacon.

Step 5:

In the same pan, add 2 more tablespoons of rendered bacon fat over medium-high heat, then add onions. Season lightly with salt, then sauté for 3 to 4 minutes.

Step 6:

Turn the heat to low-medium and cook while occasionally stirring for 30 to 35 minutes until well caramelized.

Step 7:

While waiting, add cream cheese and Velveeta to a slow cooker and cook over high heat. This will allow the cheese to melt without it sticking or burning. It will take about 25 to 30 minutes to fully melt.

Step 8:

Add the caramelized onions to the slow cooker with the melted cheese, followed by cooked beef and crispy bacon.

Step 9:

Stir in tomatoes and jalapeños. Cover and heat for 10 to 15 minutes or until the cheese is completely melted and mixed in with the other ingredients.

Step 10:

Pour the beer, lime juice, green onions, and cilantro. Stir to combine.

Step 11:

Garnish with sliced green onions and chopped cilantro. Serve with tortilla chips. Enjoy!
