Ingredients:

  • 5 tbsp unsalted butter, divided
  • 3/4 cup yellow onions, finely diced
  • 1/2 cup celery, finely diced
  • 1 tbsp minced garlic
  • 2 lb Yukon gold potatoes, peeled and diced
  • 4 cups savory chicken broth
  • 3 tbsp all-purpose flour
  • 4 – 8 oz cream cheese
  • 3 cups whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 – 2 tsp chives, finely chopped (optional)

Toppings:

  • bacon, chopped
  • broccoli, finely diced
  • shard cheddar cheese, shredded
  • green onion, sliced
  • sour cream
  • chili powder

Directions:

Step 1

In a large pot, melt some butter and once it’s melted down, go ahead and add 3/4 cup of finely diced onion and 1/2 cup of finely diced celery. Cook them until they are nice and tender. Next, add the minced garlic and continue cooking them. Dump the diced potatoes right into the pot, then add 4 cups of chicken broth. Bring it to a boil, then reduce it to a simmer. Let it simmer just until the potatoes are nice and tender. After this, mash them with a potato masher, then set them aside over low heat.

Step 2

Next, in a saucepan, melt some butter, then add 3 tbsp all-purpose flour. Stir it up and let the flour cook until it’s nice and golden. After this, add 4 – 8 oz cream cheese and 3 cups whole milk. Stir until the cream cheese is completely melted. Pour this into the potato mixture. Mix everything well and season to taste, then bring the pot to a simmer. Finally, put some toppings on it (bacon, broccoli, shredded cheese, and green onions) before serving.
