Add 3 to 4 tablespoons of water and the sliced cauliflower florets in a large microwave-safe bowl. Dampen a paper towel and place on top of the cauliflower. Microwave on high for 5 to 7 minutes.
Add the cream cheese, sour cream, garlic powder, half of the chopped bacon, half of the herbs, brown mustard, half a cup of cheddar cheese, and half a cup of Monterey jack cheese. Mix until well combined.
Transfer the hot cauliflower to the cream cheese mixture. Mix until well incorporated.
Transfer the mixture into a 9 x 13 casserole dish and spread evenly. Top it with the remaining herbs, bacon, and cheese. Sprinkle salt on top. Cover with aluminum foil.
Place in a 375F preheated oven and bake for 20 minutes covered. After that, remove the foil and bake for another 5 minutes to let the cheese brown. If the top doesn’t turn brown, broil it on a high setting for 3 minutes. Let it cool for a few minutes before serving.
