I have a new favorite recipe, and I’m sure you will love it. This is called the lemon pistachio cake, and it’s by From the lost kitchen on Youtube. I have to admit – I didn’t expect it to turn out this good. The earthy taste combined with the citrusy and zesty flavors is just amazing. Make sure to try it at home.

Sift 1 1/2 cups of all-purpose flour, 1/2 teaspoon of baking soda, 1 teaspoon of baking powder, and 1 teaspoon of salt directly into a large bowl.
Add 1 cup of softened butter and 1 cup of sugar in a bowl. Whisk until creamy. Make sure to scrape the sides while mixing.
Separate egg whites from yolks. Add the yolk to the batter and whisk until well combined.
Gradually add dry ingredients to the wet ingredients, then mix until well incorporated.
Add 2 teaspoons of vanilla essence to the mixture and mix again. Set aside.
Get the egg whites and beat until soft peaks. Next, add 1 tablespoon of lemon juice, then mix for 1 minute.
Fold the whipped egg white into the cake batter little by little. Fold in one direction. Do not overmix it.
Add 2 cups of ground pistachio and 1 tablespoon of lemon zest to the batter. Now is the perfect time to add a bit of green food coloring. Mix until well combined.
Pour into a cake tin lined with parchment paper.
Place inside the preheated oven at 350F and bake for about 1 hour.
Remove from the oven and let it cool for a while. Garnish, slice then serve. Enjoy!
