To make these lemon meltaway cookies, all you need is 7 ingredients – butter, sugar, lemon, flour, cornstarch, salt, and powdered sugar. It’s a simple recipe, yet it is full of flavors and highly addictive. The fresh lemon juice and zest make these cookies so much better. They are just pure perfection! Start by preheating your oven to 350F and lining a baking sheet with parchment paper.
In a large mixing bowl, add butter, sugar, and lemon zest. Cream the mixture until light and fluffy using an electric mixer.
In a medium bowl, combine flour, cornstarch, and salt.
Gradually add the dry ingredients to the wet mixture, while stirring until well combined.
Using a tablespoon, scoop the dough and form into balls using the palm of your hands. Place on a baking sheet, spacing the cookies at least 2 inches apart.
Transfer to the center rack of the preheated oven and bake for about 8 to 10 minutes.
Once done baking, immediately flatten the surface of each cookie with a clean measuring cup or glass. Allow the cookies to cool completely before putting in the icing.
Make the icing. In a small mixing bowl, add powdered sugar and lemon juice and whisk until well combined. It should be slightly thick. If it’s too thick, add more lemon juice. Otherwise, add more sugar.
Spoon a little amount of the lemon glaze onto the completely cooled cookie and spread it evenly over the top using the back of the spoon. Garnish with lemon zest, if preferred. Let the glaze firm up before enjoying.
