Loaf cake recipes are simple to create, so you don’t have to spend a lot of time in the kitchen to have a satisfying dessert. Even though its name doesn’t sound the most exciting, a loaf cake, whether in different flavors or with various icings and glazes, will surely be a crowd-pleaser. Savor Easy gives us another loaf cake recipe that will make sure you have a moist and velvety dessert with a drizzle of sugary lemon glaze.

Preheat the oven to 320 Fahrenheit.
In a bowl, put the sugar in, then add some lemon juice zest, and mix them together. Once thoroughly combined, add butter. Make sure the butter is softened but not melted beforehand. Combine the butter with the mixed sugar and zest with your spatula. Add in vegetable oil and mix again. Then switch to using a whisk to mix thoroughly until light and fluffy and the color becomes light yellow.
Add two eggs, one at a time. Then whisk to combine after every addition. Add the lemon juice to the light yellow mixture. Switch to your spatula and mix thoroughly until smooth. Excess should be scraped off the sides and bottom of the bowl.Using a sifter, add in the all-purpose flour, baking powder, and salt. Mix again until there are no traces of flour or lumps. Then, whisk in the milk until it is smooth and liquid.
Pour the batter evenly into your 8x3x3 loaf pan that’s lined with baking paper. Bake in a preheated oven for 40–50 minutes. Once fully baked, take it out of the oven. Let the cake cool completely on a rack.
Once cooled, take the loaf cake carefully out of the pan. Peel off the parchment paper.
Now it’s time to make the lemon glaze. Put the icing sugar in a bowl and mix with the lemon juice until it becomes a liquid mixture. Now drip the glaze slowly on the loaf cake.
