Ingredients:

Casserole:

  • 2 lbs ground beef 85/15
  • 1/2 medium red onion, diced
  • 1 medium red bell pepper, diced
  • 2 tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp pink Himalayan salt
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1/3 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1 3/4 cup shredded Mexican cheese

Topping:

  • 1/2 cup shredded lettuce
  • 1/4 cup shredded Mexican cheese
  • 1/4 cup tomatoes, diced
  • sour cream (optional)

Directions:

First, preheat the oven to 350F. In a large skillet, brown the ground beef, onions, and bell pepper until they are cooked and tender. Season with chili powder, salt, cumin, garlic powder, oregano, red pepper flakes, and pepper.
