Mexican food can be tough to eat if you’re on a diet, but it’s not impossible. This keto taco pie recipe by All Day I Dream About Food on YouTube shows how incredibly simple it is to create a weeknight dinner that can still fulfill those cravings. It’s always nice to make and find recipes at home that can be healthier, and that is quick to make. Ingredients:

  • 1 lb ground beef
  • 3 tbsp taco seasoning or one packet taco seasoning
  • 6 large eggs
  • 1/2 cup heavy cream
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup shredded Cheddar cheese I used Cabot Chipotle Cheddar for an extra kick!

Directions:

First, preheat the oven to 350F. Brown the ground beef in a large skillet and stir to break the clumps of meat up. Add taco seasoning, stir until combined, and reduce heat to medium-low for the sauce to thicken.

Next, spread the ground meat in the prepared pie pan. In a large bowl, combine and whisk eggs, cream, garlic, salt, and pepper. Then, pour on top of the meat. Sprinkle with cheese and bake for 3o minutes.

Most low-carb meals are easy because they mainly consist of meat and healthy fats such as cheese. There are no complex steps besides cooking the meat dumping everything together in one pan. You can top this keto taco pie with sour cream, tomatoes, and chopped avocado. Also, all of those ingredients are keto-friendly too. I’ve never had this before, but I would love to try it when I’m feeling a lighter taco meal.
