Make yourself a healthy simple dish or a tasty filler to your sandwich with these juicy and tender chicken patties. These are great alternatives to beef or pork burgers as they have lower calories. Cut the chicken breasts horizontally into two parts and finely chop them into small pieces. Once done, place in a large mixing bowl.
Finely dice the yellow onion and chop the cilantro, then add them to the bowl. Put 3/4 cup of oats, and 1 teaspoon of salt and pepper to taste. Crack 2 eggs and put them in a small bowl. Using a fork beat the eggs, then add them to the bowl. Mix all ingredients until well combined.
Cover the bowl with plastic wrap and place it in the fridge. Refrigerate the mixture for 30 minutes.
Get a cookie or ice cream scoop, portion the mixture into a large cooking sheet or cutting board and form the chicken patties with your hands. This will make 15 pieces in total.
Place a large non-stick skillet over medium heat and pour 3 tablespoons of olive oil. Add the patties and fry each side for 2 to 3 minutes. Fry the patties in two batches to not overcrowd the pan. Once done, transfer to a plate, then serve. Enjoy!
