Cut the underside of the chicken breast in a criss-cross pattern using a knife. Then put the olive oil and 1 tablespoon of butter into your pan. Once heated, place the chickens.
While the chicken is cooking, finely chop the garlic. Once done, season the chicken with salt and pepper. Once the bottom part is cooked and brown, flip them around and season again. Let it cook and dice the shallot into small cubes.
Once your chicken breasts are done, remove them from the pan and place them on a plate. Get the remaining butter and put it into the pan. Next, add the garlic and fry for 30 seconds until it releases the savory aroma. Combine the shallots and cook until translucent. Add the chicken broth or warm water, parsley, heavy cream, lemon juice, nutmeg, and salt. Stir the sauce and cook for 2-3 minutes.
Place the chickens back into the sauce, and pour some of the sauce on top. Close the lid and let it simmer on low heat for 5-10 minutes.
