Do you love pancakes? If so, try Chef Billy Parisi‘s version of johnny cakes. Pancakes are made with sugar and flour, while these are made with cornmeal. You’d probably think of cornbread while eating these pancakes due to their distinct corn flavor. They are crispy on the outside and soft inside! Be sure to give them a try.

To make Johnny cakes, also known as hoe cakes, you need all-purpose flour, fine cornmeal, sugar, baking powder, sea salt, eggs, unsalted butter, buttermilk, water, and cooking oil. They are easy to prepare, just like your regular pancakes. Top them with a slice of butter and syrup, or serve with scrambled eggs, soups, cheese, or chicken.
Note: to make buttermilk, add one tablespoon of white distilled vinegar or lemon juice to your milk
In a large bowl, add the all-purpose flour, 1 1/2 cups of cornmeal, 2 tablespoons of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of sea salt.
In a separate bowl, add 3 large eggs, 1/4 cup of melted unsalted butter, 1 cup of buttermilk or whole milk, and 2/3 cup of water. Whisk to combine.
Gently pour the wet mixture into the dry ingredients while slowly whisking. Gently whisk everything together just until combined. Do not overmix it.
Place a pan over low heat and add some oil. Once hot, add a ladle of the mixture and cook for 3 to 4 minutes. After that, flip it and cook the other side for another 3 to 4 minutes until golden brown. Make sure to keep an eye on them as they can burn easily.
Once done cooking, transfer to your serving plate. Add a sliced butter on top and let it melt. Drizzle syrup on top and serve. Enjoy!
