I always love a good bowl of soup, especially when it’s cold, and this soup recipe from Recipe30 on Youtube is definitely one of my favorites. This garlic soup may sound simple, but it tastes divine. It’s also pretty simple to make, and your family will definitely request this often. Learn the full recipe and instructions by watching the video below.

Ingredients:

  • 2 medium potatoes
  • 1 brown onion
  • 1 large leek
  • 2 whole small heads of garlic
  • 7 cups of chicken stock
  • 1/2 tsp dried thyme leaves
  • 1/2 cup cream
  • 1/2 cup olive oil
  • 1 cup chopped parsley
  • 6 slices of rustic bread for croutons
  • salt and pepper to taste

Directions:

Step 1

Roughly chopped your brown onion and leek, then set aside. Next, put your soup pot on the stove over medium heat and add 1/2 cup of olive oil. Add the chopped onion and the chopped leek. While that’s cooking, go ahead and peel your garlic cloves and roughly chopped them. Add them to the pot, then add 1/2 tsp of dried thyme leaves. Turn the heat to low and cook gently for 15 minutes without browning. While that’s cooking, prepare the potatoes by peeling and dicing them. Add them to the pot, then add 7 cups of chicken stock. Season with salt and pepper. Mix well and simmer gently for 25 minutes.

Step 2

After 25 minutes, add 1/2 cup of cream and mix well. Add the soup to the blender and blitz until smooth consistency. Taste it for seasoning. Next, slice some pieces of rustic bread and dice them into croutons. Put some oil in a pan over heat, then fry the croutons until brown and crispy. Serve the soup with croutons and freshly chopped parsley.
