These incredibly crunchy and delicious potatoes will always be my go-to snacks! It’s definitely better than your regular fries. I made this recipe by Ricette Fresche right away when I saw it on Youtube, as it only requires three simple ingredients, and I had all of them at home. The outside is crispy and the inside is soft. Ingredients:
- six medium potatoes
- four to five tablespoons of cornstarch
- salt to taste
- oil for frying

Instructions:
Step 1:
Place the potatoes in a big pot and fill it with water. Boil the potatoes until they are soft. Peel the skin off and place them in a bowl. Mash them using a fork or a potato masher.
Step 2:
Add some salt to the mashed potatoes and mix until well incorporated.
Step 3:
Gradually add 4 to 5 tablespoons of cornstarch to the mashed potato and mix after every addition.
Step 4:
Transfer the potato to your work surface and roll it. Divide it into four parts. Get one and roll it. Cut it again into small pieces, then roll each into a ball. Try to make them in the same size as much as possible.
Step 5:
Get a hand juicer and brush it with oil. Flatten one of the balls and press it onto the tip of the juicer to form a clam shape. Repeat with the remaining dough balls.
Step 6:
Add a generous amount of oil into a pan and place over heat. Once hot, add the formed potatoes and fry until golden brown on all sides.
Step 7:
Once done, strain them and place them over a plate lined with a paper towel to remove excess oil. Serve it with your favorite sauce and enjoy!
