Ingredients:

  • 1 lb dried spaghetti
  • 1 tsp kosher salt
  • 1/3 cup olive oil
  • 8 large garlic cloves, cut into thin slivers
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup of pasta water
  • 1/2 cup minced fresh parsley
  • 1 cup freshly grated parmesan cheese, plus more for serving

Directions:

Step 1

To start, cook your pasta al dente, then set it aside. Next, slice the large garlic cloves into thin slivers. After this, heat 1/3 cup of olive oil in a large pan, then add the thinly sliced garlic. Saute for about two minutes, just until it starts to have color. Next, add 1/2 tsp crushed red pepper flakes and 1/2 cup of pasta water. Season with 1 tsp of salt, then let it cook for five minutes.

Step 2

Now, add the cooked pasta right into the pan. Toss and let it cook for a few minutes, letting the pasta absorb the liquid. Lastly, add 1/2 cup minced fresh parsley and 1 cup freshly grated parmesan cheese. Toss it all together, then serve.
