Is this the new banana bread? Personally, I love zucchini bread. Some people may hear zucchini and think why? Trust me, I had the same first initial reaction when I heard the name, but it sounds healthy. The zucchini happens to be mild and adds wonderful texture to the bread. Zucchini bread is a perfect summer veggie to sneak in to keep the bread moist and light. Also, I’m not a big walnuts fan, so I usually skip out on the nuts and keep it just the bread. Sometimes I substitute and add dark chocolate chips, which is a game-changer. Joanna Gaines takes you through the steps naturally and I love how personal her videos are. On a side note, she’s a personal favorite, and I love her whole collection at Target. Joanna seems so genuine and her daughter, Ella, is the one recording behind the camera.

Ingredients:

  • 3 cups thickly shredded zucchini, (2 medium)
  • 1 1/4 cups vegetable oil
  • 2 cups of sugar
  • 4 large eggs
  • 1 tbsp pure vanilla extract
  • 3 cups flour
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • chopped walnuts

Directions:

Step one: Watch the video, follow the instructions by Joanna Gaines. Chop 2 medium zucchinis, and add them to the food processor until they’re thickly shredded.

Then, combine the dry mix together and mix slowly until combined.  You’re going to bake the bread at 350F for 40-50 minutes. Once finished, cool the bread on a rack for 15-30 minutes.

After watching this video, I am determined to make some zucchini bread when I get off work. My roommate and I used to bake all the time, and it’s the perfect way to simply cut a slice for breakfast or a snack throughout the day.
