When I hear “mojitos,” I think refreshing. A nice, hot sunny day with a mojito in hand is the summer energy for me. Jyothi Rajesh’s watermelon mojito recipe is an amazing fit for the summer. If you’re a mojito fan, you can add this to your list or switch out for a different fruit. I’m a fan of watermelon because it’s super hydrating. Many summer cocktail drinks are loaded with sugar, but Jyothi’s recipe does not require an excessive amount. The natural sweetness comes from the watermelon and that should be enough. I love sweets, but not sugary sweet cocktails. For me, I would opt for agave nectar, honey, or no extra sugar. Some people do like sweeter drinks, so just change up the recipe sweetness to fit your palette. If you’re not a fan of rum and want to enjoy this refreshing summer drink, make it a virgin. Leave out the rum, and make a pitcher full of sweet, fruity virgin mojito.

Ingredients:

  • 1 small watermelon, cubed
  • 3 oz white rum
  • 3 limes, juiced
  • 15 mint leaves, muddles
  • 15 mint leaves, fresh
  • 1 tablespoon powdered sugar
  • 2 cups ice

Directions:

First, chop up the watermelon in chunks. Blend the watermelon and strain the juice.

Second, add ice to your pitcher, muddle your mint leaves and throw in the rest of your ingredients.
