You may have heard of this famous dessert before as this was a favorite of Elvis Presley back in the day. Now, you can also taste how wonderful this treat is that a lot of people are going crazy for. Thanks to The Country Cook on YouTube for making this dessert easier to make.

Ingredients:

  • 1 box of yellow cake mix
  • Eggs
  • Oil
  • Water
  • 1 (20 ounces) can of crushed pineapple, use including the juice
  • 1 cup of sugar
  • 1 (8 ounces) block of cream cheese,  softened
  • ½ cup or 1 stick of unsalted butter, at room temperature
  • 3 cups of powdered or confectioners sugar
  • ½ cup of chopped pecans, optional

Directions:

Step 1

Prepare the yellow cake mix according to the package instructions, then put it in a 9*13″ baking pan, and bake it in the oven. While waiting for the cake to bake, place a small saucepan on a stove over medium heat, then add the pineapple and sugar, and stir them together to combine. Bring it to a boil while stirring consistently for about 2 to 3 minutes or until the sugar is dissolved. Remove it from the heat and wait for the cake to finish baking. Once done baking, grab a fork, then poke holes all over the top of the cake while still hot, and pour the warm pineapple mixture over the cake spreading it out evenly so that it covers the cake. Let the cake cool completely before you start frosting it.

Step 2

To prepare the frosting, simply add the cream cheese and butter to a large mixing bowl, then beat them together either using a stand or hand mixer over medium speed for about 2 minutes or until smooth. Gradually add the confectioner’s sugar, then beat them together until the frosting becomes smooth and creamy. Now, stir in the chopped pecans, then drop the frosting by dollops onto the cake, and spread it out to coat the cake until nice and smooth. Cover the cake and put it in the refrigerator, then let it chill for about hours or more before serving.
