If I’m going to describe Greek cuisine in three words, it would be simple, full of colors, and healthy. They always use herbs, olive oil, and vegetables in their dishes, so they are really good for you. One of my go-to recipes is this Greek chicken by America’s Test Kitchen. The meat is so moist, tender, and flavorful! I’m sure you’ll be impressed by how good it will turn out.

Ingredients

  • 2 tablespoons of fresh thyme (chopped)
  • 2 tablespoons of fresh rosemary (chopped)
  • zest from 1 lemon (6 strips peeled then chopped)
  • 5 cloves of garlic (coarsely chopped)
  • 1/4 cup of extra virgin olive oil
  • 1 tablespoon of kosher salt
  • 1 1/2 teaspoon of dried oregano
  • 1 teaspoon of dried coriander
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon of black pepper
  • 3 lbs of chicken

Instructions

Step 1:

In a mixing bowl, add 2 tablespoons of chopped thyme, 2 tablespoons of chopped rosemary, 1 tablespoon of salt, 1 1/2 teaspoon of dry oregano, 1 teaspoon of coriander, 1/2 teaspoon of red pepper, 1/2 teaspoon of black pepper, 1/4 cup of olive oil, chopped garlic, and chopped lemon zest. Mix until well combined.

Step 2:

Cut deep slashes on the chicken skin to increase the surface area and let the marinade stick. Add them to the marinade. Toss the chicken until fully coated. Cover it with plastic wrap and let it marinate for 30 minutes to 2 hours.

Step 3:

Place the chicken and excess marinade in an oven-proof skillet in a single layer.

Step 4:

Put the oven rack 6 inches from the broiler element. Place the chicken inside the oven and bake at 425F for 30 minutes until the breast meat hits 160F and the dark meat hits 175F.

Step 5:

Remove the skillet from the oven and spoon the juice on top of the chicken. Baste the chicken and broil for about 3 minutes until the chicken browns. Make sure to keep an eye on it.

Step 6:

Remove it from the oven and let the chicken rest in the pan for 10 minutes. Transfer just the chicken to your serving plate. Add a tablespoon of lemon juice to the juices in the pan and mix. Spoon on top of the baked chicken. Serve and enjoy!
