Whenever we have a family dinner at our favorite restaurant, we would always order Texas chili without beans on it. Last night I tried making my version of Texas chili by following this recipe and tutorial by Chili Pepper Madness on YouTube. My family loved it ’til the last serving and we might even stay at home more often than eat at the restaurant like we used to.
Step 1
Lightly toast the dried peppers in a dry pan for about 1-2 minutes per side. Remove from heat and let it cool, then remove the stems and pour out the seeds. Soak the peppers in hot water for about 20 minutes until they’re nice and soft. Transfer only the peppers in a food processor, then add in 1 cup of either the soaked water (this might give it a bitter taste and is according to preference) or just plain water, and add a bit of salt to taste. Grind them together until nice and smooth, transfer them to a large bowl, and set them aside.

Step 2
In a large mixing bowl, season the cubed beef with cumin and a bit of salt and pepper to taste (you can change, add, and use any seasoning you want), toss it until well coated. Heat a tablespoon of oil in a large pot over medium-high heat, then add in the seasoned beef. Cook it for about 6-7 minutes and sear the beef all over. Remove the beef and set it aside. Add the remaining olive oil to the pot, then add the jalapenos and onion. Let them cook for about 5 minutes, then add the garlic and give it a good stir. Cook it for another minute.
Step 3
Put the cooked beef back into the pot and add the chili paste as well (you can strain the chili paste if you want). Give it a good stir and let it cook for about 2-3 minutes. Pour in the beef broth or beer, add 2 cups of water, brown sugar, Worcestershire, and cornflour, then bring it to a boil. Reduce the heat, cover, and let it simmer for about 2 hours until the beef is very tender (it might take longer depending on the beef cuts you used). Stir it well once every 30 minutes or so, add about ¼ cup of water if it becomes too thick then stir. Serve it garnished with either chopped onion, spicy chili flakes, freshly chopped cilantro, lime wedges, crema or sour cream, Fritos or tortilla chips, or whatever you desire.
