These pumpkin cheesecake brownies by El Mundo Eats on YouTube look so fudgy and easy to make. If you like pumpkin, cheesecake, and brownies, it’s an ideal treat all in one. I am curious how this would taste because it’s unique to see all of these desserts and flavors mesh into one. I love the orange pumpkin color on top of the chocolate swirls because it adds a marble effect on the brownies. Brownies are one of my baked sweet desserts, and they look so rich. The combination sounds delicious, and I have to make these for the Fall season and holidays. I am confident that these would be a hit at my Thanksgiving because it’s a typical dessert someone would make.

Ingredients:

The Pumpkin Cheesecake:

  • 4 oz full-fat cream cheese (110 g), room temperature
  • ½ cup pumpkin puree (125 g), room temperature
  • 1 large egg, room temperature
  • ¼ cup granulated sugar (50 g)
  • ½ tsp pumpkin pie spice mix

Dry Ingredients:

  • cup all-purpose flour (80 g)
  • 1 tsp pumpkin pie spice mix
  • ½ tsp salt
  • ½ tsp baking powder

Wet Ingredients:

  • 8 oz semisweet chocolate (225 g), chopped
  • ½ cup unsalted butter (110 g)
  • ½ cup granulated sugar (100 g)
  • ½ cup unrefined brown sugar (80 g), lightly packed
  • ½ cup pumpkin puree (125 g), room temperature
  • 2 large eggs, room temperature

Directions:

First, mix all of the pumpkin cheese ingredients together in a medium bowl until there are no lumps with a whisk. Then set aside. Do the same for the dry ingredients, but in a separate bowl. Continue to watch El Mundo Eats tutorial on YouTube for further instructions and details.

Next, once all of the ingredients for each layer are mixed and ready, pour the brownie mixture into an 8×8 inch baking pan while reserving 1/4 cup for the chocolate swirls. Then, pour the pumpkin cheesecake mixture on top, and add the remaining chocolate all over. Use a wooden skewer to make random swirls. Bake in a preheated oven at 350F for 33 minutes or until slightly wet.
