This pineapple upside-down cheesecake recipe by Delish on YouTube is simple and uses a boxed cake mix. This is a sweet dessert for those that have a sweet tooth and want to satisfy two different cravings. The idea of combining these two together makes it look like a big ice cream sandwich cake, but I think it would complement each other well with the flavors. I am amazed at how thick the cake slice ism and I’m sure it’s rich and decadent.

Ingredients:

For the topping:

  • Cooking spray, for pan
  • 1/4 cup unsalted butter
  • 1/2 cup packed brown sugar
  • 1 20-oz. can pineapple rings in juice
  • stemless maraschino cherries

For the cake:

  • 1 box yellow cake mix
  • 1/3 cup oil
  • 1 cup pineapple juice
  • 3 eggs

For the cheesecake:

  • 3 8-oz. packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 2 tsp. vanilla extract
  • 1/2 tsp. kosher salt

Directions:

First, preheat the oven to 350F. Mix the vanilla cake box batter then, use a cake pan to melt butter in the oven. Add and spread the brown sugar to the bottom of the round cake pan. Add the pineapple rings and place cherries inside and between the slices. Continue to watch Delish tutorial on YouTube for full instructions and details.

Next, once the cake is baking, make the cheesecake layer. In a large bowl, beat the cream cheese with a hand mixer until light and fluffy. Add the rest of the ingredients and make sure everything is mix until smooth. Pour the cheesecake layer over the baked cake in the springform pan. Let it chill overnight.

Overall, this pineapple upside-down cheesecake looks amazing and easy to make. Pineapple upside-down cake is usually too sweet for me, but it’s such a moist cake. I would make this cake just because the presentation is beautiful.
