Wash the potatoes thoroughly with the skin on or you can peel the skin off if preferred. If the potatoes are small, slice them in halves but if they are big, slice them into quarters.
Put some water in a pot and add 1 tablespoon of salt. Let it boil.
Once boiling, add the potatoes to the salted water and let it cook for about 10 minutes. After that, strain and place in a bowl.
In a pan, add 4 tablespoons of olive oil, minced garlic, and rosemary and fry them until slightly brown.
Strain the infused olive oil on the potatoes, then season with a little salt, black pepper, and chili powder. Mix until well combined.
Shake the potatoes well inside the bowl to rough up the edges. This will create an uneven coating which helps to make an extra crunchy outer layer.
Line a baking tray with parchment paper then transfer half of the potatoes. Place inside the oven and bake at 392 degrees Fahrenheit for about an hour. Make sure to flip them halfway through. Repeat for the remaining potatoes.
Alternatively, you can pan-roast the potatoes. Add some infused oil to a frying pan or skillet over medium heat, then add the potatoes. Fry them for 15 to 20 minutes until crispy. Flip them every 5 minutes.
Garnish the potatoes with some freshly chopped coriander. Let it cool for a while before serving. Enjoy!
