Ingredients:

  • 4-5 pounds of chicken
  • 2 tablespoons of jerk marinade
  • ½ teaspoon of salt
  • 1 tablespoon of olive oil
  • 1½ tablespoon of golden brown sugar
  • ¼ teaspoon of black pepper
  • ½ large onion
  • 1 tomato
  • 4 sprigs of thyme
  • 2 scallions
  • 1 teaspoon of Caribbean green seasoning
  • 1-2 cups of light beer
  • 4-6 pimento (allspice) berries
  • 1 teaspoon of grated ginger

Directions:

Step 1

In a large mixing bowl, add the chicken after making sure it’s all clean and the skin, as well as the fats, are removed. Season it with some salt and jerk marinade. Grate the ginger over the chicken, then add the diced tomatoes and onions. Using a spoon, mix them together until uniform, then place them in the refrigerator, and allow them to chill and marinate for about 3 hours or more. Place a pan on a stove over high heat, then heat up some olive oil, and the brown sugar.

Step 2

Stir it around to avoid it from burning, keep stirring until it caramelizes, then add the pieces of chicken, and toss them around still over high heat. Pour the light beer into the same bowl that you used to marinate the chicken, then set it aside. Continue moving the chicken around until the sauce thickens, then pour the beer, and add the allspice or pimento berries, sprigs of thyme, and chopped scallions. Give it a good mix, then add the Caribbean green seasoning, and mix it again. Cover it with the lid slightly ajar, then bring it to a boil over medium heat until the sauce is reduced.
