I love adding pickled red onions to my dishes as they upgrade just about anything. They have tangy and sweet flavors with a crunchy texture that is hard to resist. It’s so simple to make and will just take you a few minutes in the kitchen. You can add this to your sandwiches, salads, tacos, grain bowls, or avocado toast. In a small mixing bowl, combine 1/2 cup of apple cider vinegar, 1 cup of water, 1 1/2 teaspoons of kosher salt, 6 to 10 black peppercorns, and 2 tablespoons of sugar. Stir everything until the sugar and salt dissolve.
Add the sliced onions to a large bowl and pour boiling water until it’s fully covered. Let them sit for about a minute then drain the water well. Let it cool for a while.
Once the onions are cooled enough to handle, put them into a sterilized pint mason jar. Add as many as you can, then pour the brine liquid. Make sure the onions are fully covered.
Place the lid and close. Let it cool completely, then refrigerate. You can consume it the following day, but it will taste better after three days or so. Add to your favorite dish and enjoy!
