Ingredients:

  • 3 chicken breasts, cut into 6 cutlets
  • 1 tsp salt
  • 1 tbsp garlic powder
  • ½ tsp pepper
  • ½ tsp paprika
  • 1 cup flour with ½ tsp salt
  • 1.5 cup Japanese panko breadcrumbs with 1 tsp of seasoning mixture
  • 3 eggs, whisked
  • ½ cup vegetable oil

In a small mixing bowl, mix together the salt, garlic powder, black pepper, and paprika until well combined and uniform, then save 1 teaspoon for the breadcrumbs later. After cleaning the chicken breasts, slice them through in half horizontally, then grab the prepared seasoning and mixture, and sprinkle it all over both sides of the slices of chicken breasts. Rub the seasoning well into the pieces of chicken, then put it in the fridge, and let it marinate for up to 24 hours or overnight to let the flavor seep into the chicken.

Prepare the bread crumbs mixed with reserved seasoning, flour mixed with salt, and beaten eggs into separate bowls or containers. Place a pan on a stove over medium-high heat, then add the oil and let it heat up for about 30 seconds. Dredge the marinated chicken in the flour, then dip in the egg, and coat with breadcrumbs before placing it in the hot oil. Fry the chicken for about 3 to 4 minutes on each side or until the inside reaches 165 degrees. Once it is nice and golden brown, remove it from the pan, and drain off excess oil.
