This is a unique cranberry salad by Allrecipes on YouTube that is made for a side dish during Thanksgiving or the holidays. It’s unique because the layers of the creamy whipped cream and cranberry sauce would give off a dessert taste. This is a great recipe, and I want to make this for my Thanksgiving dinner this year, and it looks healthy. The fresh cranberries with the fruit juices look super refreshing, and I am used to seeing canned cranberries so this is different to me. I feel like I would eat so much of this as a dessert separately. I’m already puckering my mouth because I can imagine how tart the fresh cranberries are. However, this recipe is mixed in with a lot of other ingredients. I think it’s interesting to add chopped peanuts for some crunchy texture with a smooth consistency.

Ingredients:

  • 1 (12 oz) package fresh cranberries
  • 1 cup white sugar 
  • 1 (6 ounces) package red Jell-O® mix
  • 1 (8 oz) can crush pineapple, drained
  • 3/4 cup orange juice
  • 1 apple with peel, grated
  • 1 cup chopped pecans
  • 1 cup whipping cream
  • 1 (8 oz) package cream cheese, softened 

Directions:

First, process the cranberries in a food processor or blender. Pour sugar over cranberries, and stir to dissolve. Boil 3/4 cup of water and stir the gelatin until dissolved. Stir the cooled gelatin into cranberries, and add pineapple, orange juice, apple, and pecans. Mix well, and refrigerate overnight.

Next, beat the cream cheese until it’s smooth then add the heavy whipping cream. In a glass serving dish, assemble and layer half of the cranberry mixture, then the whipped cream mixture, and the remaining cranberry mixture.

Overall, cranberry sauce was never a thing I had growing up, but I love how tart and sweet it is. Cranberry can be bitter sometimes, but the cream would balance out the flavors.
