This candied jalapeno recipe is incredibly easy to prepare. Sliced jalapenos are cooked in vinegar and sugar syrup that is packed with different kinds of seeds. This process allows the jalapenos to absorb all the delicious flavors. You can use it as a topping for your burger or pizza or add it to your salad, sandwich spreads, or dips.

In a bowl, add the sliced jalapenos, red onions, and salt. Toss to combine. Cover the bowl with cling wrap and place it in the fridge overnight.
The following day, drain the liquid.
Using a mortar and pestle, slightly crush the mustard, coriander, cumin, and fennel seeds.
In a small pot, add the vinegar, sugar, and crushed seeds. Place over medium heat and let it come to a boil. Stir occasionally, until the sugar dissolves. It will take about 4 minutes.
Add the jalapenos and onions to the mixture, then bring it back to a boil. Let it cook for about 5 minutes.
Using a slotted spoon, transfer jalapenos and onions to a 50mL or 17 oz glass jar. Pack it down as tight as possible.
Bring the vinegar mixture back to a boil and continue cooking until it has a syrup consistency.
Carefully pour the syrup into the jar with the jalapenos and onions. Make sure they are submerged.
Cover that jar tightly with a lid and refrigerate once cooled to room temperature.
