One of the best ways to preserve a clementine is by turning it into something completely different but still useful. One of those is to make curd out of it, you can use this in a lot of other pastries and desserts too. This is also a great gift idea for the holidays, it is delicious, easy to make, and inexpensive. All you need are a few pieces of clementine or if you have leftovers and don’t know where to use them, then this is a great opportunity to not let them go to waste. I’ve made a bunch of lemon curds before, but when I found out about clementine curds, I was excited to try it and I’m glad that the taste did not disappoint, in fact, I now prefer using it as a garnish more than lemon curds. Ingredients:

  • ¼ cup (40 grams) Sugar
  • Zest of 2 clementine
  • 1 cup Clementine juice (Juice of 6 clementines)
  • 2  Whole eggs
  • 1 Egg yolk

Directions:

Step 1

In a mixing bowl, pour the sugar, then zest 2 clementines, mix them until well-combined. Juice about 6 clementines, then pour it onto the sugar mix then stir until full-combined. Crack 2 eggs and add 1 yolk, pour it into the mixture, and whisk together.

Step 2

Pour the mixture onto a saucepan on low heat, stir the mixture continuously and let it thicken a little. Strain the curd onto a bowl, keep it cool then transfer it to a bottle or a jar.
