I found this video recipe tutorial for chimichangas by Simply Mama Cooks on YouTube, and I really wanted to make it right away. The first time I ever had a chimichanga was at this old Mexican restaurant in Austin called Jaunita’s Garden, in the Eighties. The chimichangas really struck my fancy because they were so savory and quite different than anything I had ever tasted. Really, the humble chimichanga is like a savory Southern-fried pie and I love Southern fries pies, so this idea was something I was bound to love. Since then I really hadn’t thought of them much because I thought they were difficult to make, but when I found Simply Mama Cooks recipe, I realized they were super easy! You can make your own tortillas to make these chimichangas, but you can also use store-bought, which makes them a breeze to assemble.

Ingredients For Chimichangas:

  • 1 1/2 pounds of cooked chicken (shredded)
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cumin
  • salt (to taste)
  • 8 to 10 large flour tortillas
  • 8 ounces of cheese (of your choice (grated)
  • oil (for frying)

For Garnish:

  • Extra cheese
  • Salsa
  • Sour cream
  • pico de gallo
  • fresh avocado
