Luckily, MOMables – Laura Fuentes on YouTube is here to help make low-carb meals more delicious, starting with this cauliflower rice that you can make in just a few minutes and with only simple steps.

Materials:

  • Food processor or blender
  • Cheese grater
  • Knife

Directions:

Step 1

Wash the cauliflower and remove the outer leaves making sure to remove any little black spots with a paring knife. Next, cut it in half, then remove the core, and cut the florets into 1-inch pieces. If you’re using a food processor, add the cauliflower pieces inside, then pulse them in the food processor until there are no more large chunks. You can also grate the cauliflower using a cheese grater or simply mince them using a sharp knife until they look like rice pieces.

Step 2

Place a pan on the stove over medium heat, then add some oil followed by the cauliflower rice, and season it with whatever you want. Give the cauliflower a good stir, then saute until thoroughly cooked and softened. You can also cook the cauliflower rice in a microwave, simply add the cauliflower rice to a microwave-safe baking dish, then cover it with plastic wrap, and cook for 3 minutes. Remove from the microwave, then carefully lift the plastic wrap, and stir the cauliflower rice with a fork. Cover and microwave for 1 more minute. Test for tenderness, and season to taste.
