Don’t know what to give to a special loved one this holiday season? Why not try to make and bake your cookie gift, it’s easy, cheap, and delicious! I made this before and I gave it to my best friend, loved it was an understatement because she even asked me to make her another one this year. You can also just eat it if you don’t plan to give it as a gift, it’s perfect to pair with tea or coffee. This also can be served at a party this Thanksgiving and Christmas holiday! Walnut and Vanilla Cookie

Chocolate Cookie
Chop the chocolates into small pieces, put them in a small bowl, and melt them by putting them on top of a different bowl with hot water in it. In a large mixing bowl, put cubed butter and mash using a spatula, add the melted chocolate, powder sugar, and egg yolk while mixing in between each ingredient. Once well combined, sift ground almonds, cocoa powder, and cake flour then continue mixing. Transfer in a plastic wrap then cover before flattening it out with a rolling pin. Remove the plastic at the top and replace it with parchment paper, flatten, and refrigerate for an hour. Using a cookie cutter, cut the cookie dough and bake in a preheated 180°C oven for 11-13 minutes.
Walnut and Vanilla Cookie
Using a blender or mixer, combine the walnuts, powder sugar, salt, and scraped vanilla bean. Add cake flour, cold butter, and egg yolk to the mixture while blending in between each ingredient. Transfer in a plastic wrap then cover before flattening it out with a rolling pin. Remove the plastic at the top and replace it with parchment paper, flatten, and refrigerate for an hour. Using a cookie cutter, cut the cookie dough and bake in a preheated 170°C oven for 11-13 minutes.

Squeezed Cookie
Combine unsalted butter, powder sugar, salt, and egg white in a mixing bowl. Add sifted cake flour and ground almonds in the mixture, then combine. Put vanilla extract and mix before transferring it to a piping bag. On a cookie sheet, squeeze and create little swirls or be creative and make your design. Bake in a preheated 160°C oven for 18-22 minutes.
Excess Scrap Cookie Dough
Stack together and flatten out, cut the uneven edges before cutting them into thick strip squares. Bake in a preheated 170°C oven for 11-13 minutes. Assemble all cookies in a lunchbox.
