I highly recommend not to remove the skin, as it is also packed with vitamins. The only problem with preparing apples ahead of time is that they get brown easily. Way to Keep Apples From Turning Brown

Step 1:

Fill a large container with one gallon of water and add half a teaspoon of salt. Whisk until the salt dissolves.

Step 2:

Cut the apples into slices, removing the core. You don’t have to peel them.

Step 3:

Add the slices of apples into the water with salt and let them sit for 5 minutes. Make sure that the flesh part is facing the water.

Step 4:

After 5 minutes, drain the apples. Do not rinse them with water. Add them to an airtight container, then cover with the lid. Make sure it is tightly sealed. Place in your refrigerator. The apples should stay fresh and not brown for about 3 days.
