Preparing this treat is very easy and simple. It’s delicious and perfect for kids as well, plus it’s healthier than store-bought ones, and tastes better of course!

Using a food processor, combine the flour, sugar, and salt, then pulse them until uniform. Add in the butter and pulse until incorporated or until the mixture attains a coarse-crumb consistency. Add in the sour cream and pulse it again until the dough starts to cling together. Lay a sheet of plastic wrap onto a flat surface then transfer the dough on it. Cover the dough then start shaping it into a ball before flattening it with a rolling pin. Chill the dough in the refrigerator for about 30-60 minutes while preparing the filling. Once the filling is done, lightly flour the surface, transfer your dough, and start rolling it into a thick rectangle with about a ⅛ – ¼ inch size. Cut the dough into 2.5 x 4 inches rectangles with a knife, pizza wheel, or cookie cutter.

Filling
Place your saucepan on a stove over medium heat, then add in the sugar and cornstarch, whisk them together until uniform. Add in the strawberries and lemon juice, then give them a good stir and let them cook until the berries have softened and have released their juices. Using a potato masher, mash the strawberries and continue to cook them, stir them constantly until the mixture thickens. Remove the saucepan from the heat, then add the butter, stir it in until fully combines, then set it aside and let it cool completely or put in the fridge for faster cooling.
Glaze
Simply combine the powdered sugar, milk, light corn syrup, and vanilla extract in a mixing bowl. Whisk then until there are no more chunks left and the mixture has a smooth and shiny consistency. Add more milk as needed until the icing/glaze achieves a ribboning effect.
Assemble
Line your greased or sprayed baking sheet with parchment paper, then place the rectangle doughs on it. Lightly brush half the portion of the rectangles with egg wash, then scoop the strawberry filling on each brushed dough. Place another rectangle on top (those that aren’t brushed with egg wash yet), then crimp the sides with a fork to seal. Lightly brush the surface with egg wash (for best results, poke holes in the surface of the pop tart to allow the steam to escape while it cooks). Repeat the process with the remaining rectangles, then bake them in a preheated oven at 400°F for 15 to 17 minutes or until golden brown. Let the pop tarts cool on your baking sheet before icing and topping with sprinkles.
