Keep your brain moving when you work or do something active by snacking on some tasty chips. Chips are easy to make and are a light snack for any time of the day. It will only take you about 30 minutes to make a batch. My Lockdown Rasoi gives us a crispy homemade potato chip recipe to follow.

In a bowl, mash your boiled potato. Put the mashed potatoes into a blender jar to start making potato paste.
In the jar, pour in 2 tbsp of water. Tightly grip the blender and blend until a smooth paste-like texture is achieved. Pour the potato paste into a large mixing bowl and scrape out the paste in the jar. Fill the jar with 1 cup rice flour, 12 cup corn starch, and 1 teaspoon salt. Combine the mixture well with a spatula.
Then, knead the mixture into a tight dough. divided into two parts. Apply some corn starch to prevent the dough from sticking to the surface after each part. Roll out the dough and thin it with a roller. With your fork, prick the sheets. To shape them into chips, use the cookie cutter to press round chips. When you are finished, stack the chips in a tower.
In a medium-hot pan with cooking oil, start dropping the chips. Take it out on a plate with a strainer and let it rest for 5 minutes. For the second fry, fry the chips in medium-hot oil for 2 minutes. Strain them out when they turn golden brown onto a plate with tissues. The tissues will soak up excess oil.
For the seasoning, mix well 1 tsp salt and 14 tsp citric acid. Lastly, sprinkle the salt mixture over the chips and mix well.
