To start, rinse and wash the potatoes thoroughly and peel off the skin if desired. After this, cut into slices as thinly as possible. Once all are sliced, plunge them into a bowl of water with ice to get rid of starch on the potatoes. Leave them for around two to three minutes. After this, put them on a paper towel-lined plate and pat them dry with another sheet of paper towel on both sides.
Once done, place each potato slice on a plate lined with parchment paper (don’t overlay them with another as they will stick together), then brush them with a little bit of olive oil on each side. Pop them in the microwave and cook for one minute and thirty seconds on one side, then turn them over, and continue to microwave for another minute. Sprinkle a little bit of salt once done.
To make the ranch, combine 1 tbsp dried parsley, 1 tsp dried dill weed, 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp garlic powder, and 1/4 tsp ground pepper. Mix well, then sprinkle it on the potato chips and toss them over.
