If you love marshmallows, you have to try this homemade recipe by Preppy Kitchen. It tastes a hundred times better than the store-bought ones! It melts in your mouth and has a luscious taste. I’m sure you’ll never buy the premade ones again once you try this. Put this on top of your hot chocolate, or use it to make s’mores.

Ingredients

  • 2 tablespoons of vegetable oil
  • 1 cup of confectioners’ sugar
  • 1/2 oz of gelatin (2 envelopes powdered, unflavored)
  • 1 1/2 cups of granulated sugar
  • 1 cup of light corn syrup
  • 1/4 teaspoon of salt
  • 2 teaspoons of vanilla extract
  • 1 cup of water (divided)

Instructions

Step 1:

Brush the bottom of a 9-inch square baking pan with vegetable oil. Next, dust it with confectioners’ sugar.

Step 2:

In the bowl of a stand mixer or your regular bowl, add 1/2 cup of water and 2 gelatin packages. Mix well then set aside.

Step 3:

In a large saucepan, add corn syrup, salt, 1/2 cup of water, and granulated sugar. Mix well, then place over medium heat. Let it come to a boil, then stir until the sugar dissolves. Put the candy thermometer into the syrup liquid (without stirring) – and wait until it is at 240F.

Step 4:

Turn the mixer on low speed, then pour hot sugar into the bloomed gelatin. Gradually increase the speed to high, and beat until it has a very thick consistency. It’s ready when it forms a thick ribbon once the whisk has been removed. Add the vanilla and mix once the desired consistency is reached.

Step 5:

Transfer the marshmallow to the pan. Take note it will be sticky. Use a spatula or wet your fingers to spread it evenly and smoothen the top. Let it sit, uncovered at room temperature for at least 4 hours.

Step 6:

Dust your cutting board with confectioners sugar. Gently pull the marshmallow from the pan using a spatula, then transfer it to the cutting board. Dust the top with confectioners’ sugar, then cut it into pieces, dusting the knife after each cut. Dust the cut sides too so they don’t stick together.
