Start by chopping dates, prunes, and candied citrus fruits. Peel the oranges. Mince the peelings. Put the dates, raisins, candied fruits, cherries, prunes, cranberries, and peelings in a pot.
Cut the peeled oranges into halves. And then juice each one.Then pour the juice into the pot of mixed fruits. Add the rum. Allow to cool completely after heating thoroughly over low heat.
Chop the walnuts. Grind the hazelnuts and almonds in a mixer until powdery.
In a bowl, whisk butter and sugar together until smooth. Pour in the molasses and combine with a mixer. Add in the eggs one at a time. When added, mix each one. Continue mixing until the mixture becomes light and smooth.
Sift flour, cocoa powder, and nuts one at a time in a bowl. Then combine.
Put all the herbs and spices on a plate. Add in the baking powder and baking soda. Then combine them together. Once combined, Add the combination to the sifted flour, cocoa, and nuts. Mix everything slowly with a whisk. Then add it to the butter mixture. Mix carefully with a spatula until it becomes smooth. Add in the walnuts. Then combine. Take the cooled fruits and add them to the batter. Combine together.
The amount of batter you have makes for two cakes. So get two loaf pans lined with parchment paper. Pour the batter evenly into each loaf pan. Decorate the tops with pecans however you want. Cover with aluminum foil and bake at 290 degrees Fahrenheit for an hour.
After baking, brush with rum and set aside for 10-15 minutes.Let the cake cool on a wire rack. Then brush it again with rum. Drizzle white sugar powder on top.
The good thing about fruitcakes is that they last for weeks. So, for better taste, wrap the cakes with parchment paper and foil and soak them with rum 1-2 times a week. Everything will smell so good and taste so delicious.
