I’m a big fan of creme brulee, so making a good custard base is important to me, and this particular recipe is what I’m just looking for.

Ingredients:

  • 1 cup heavy cream
  • 1 cup whole milk
  • 5 large egg yolks
  • 2 tbsp honey
  • 2 tbsp cornstarch (or arrowroot powder or tapioca flour)
  • 1 tsp vanilla extract

Directions:

Step 1

To start, crack five large eggs and separate the yolks and whites into two bowls. Next, in a saucepan over medium heat, add 1 cup of heavy cream and 1 cup of whole milk. Whisk occasionally until the mixture starts to simmer, then remove it from the heat. Set it aside. To the egg yolk bowl, add 2 tbsp of honey, 2 tbsp cornstarch, and 1 tsp vanilla extract. Mix well, then slowly pour the hot milk mixture while stirring continuously.

Step 2

Now, place the saucepan back on the stove over medium-low heat, and slowly pour the egg mixture back into the saucepan. Keep stirring for another one to three minutes or until slightly thickened.

Step 3

You can serve the custard warm over some cake or fruit crisp. You can also chill it and serve it with some fruits and nuts or make a fruit salad custard.
