Salsa is good on just about anything, I especially love it on eggs in the morning. This zesty salsa is right up my street because it is basically a pico de gallo, which is my favorite kind of salsa. The YouTuber uses all fresh vegetables he grew in his garden, which makes this recipe really delicious. There are quite a few different kinds of peppers in this salsa, and as a result, that tells us that we can use whatever peppers we like and have on hand.
Ingredients For Home Canned Zesty Salsa:
Amounts Will Vary According To How Much You Are Making:
- 20 pounds of tomatoes (blanched and peeled)
- 10 onions (finely chopped)
- 5 cups of hot peppers (whatever you like will work)
- 10 cups of sweet peppers (whatever you like will work)
- 6 cloves of garlic (optional, I like mine like pico, so there is no garlic, but if you are a garlic lover, go for it)
- 18 to 20 mason jars
- A canning bath
- Canning tools
- 4 to 10 tablespoons minced cilantro
- 6 tablespoons of salt (Pickling Salt or Kosher Salt)
- 2 1/2 cups cider vinegar
