Now, I can confidently say that my pies are 100% homemade, thanks to this recipe from Crazy for Crust on YouTube. Whether you have fresh berries or frozen ones, you can count on this recipe. What’s more, you only need a few ingredients for this, and it’s so easy to make.

Ingredients:

  • 2 cups of blueberries
  • 1/4 cup of water
  • 1/3 cup of granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp of cold water
  • 1 tbsp of lemon juice

Directions:

Step 1

To start, add the blueberries to a heavy-bottomed pot over medium heat, then add 1/4 cup of water and 1/3 cup of granulated sugar. Cook the blueberries while mixing them constantly until they start to pop. (If you’re using frozen blueberries, make sure to thaw them first.) In the meantime, combine 1 tbsp cold water, 1 tbsp lemon juice, and 1 tbsp cornstarch. Mix until smooth, then add it to the bubbling blueberry mixture. Continue to mix and cook until thickened.

Step 2

Once the mixture is thick, remove it from the heat, and transfer it to a jar. Let it cool completely. The blueberry mixture will set as it cools, then you can use it for your pastries or pies.
