Ingredients:

  • 2 cups butter
  • 2 cups packed brown sugar
  • 6 large eggs
  • 2 tsp apple pie spice (or 2 tsp cinnamon)
  • 2 2/3 cup self-rising flour
  • 1/2 cup grape juice
  • 3 tbsp vanilla extract
  • 3 1/2 cups candied mixed fruit
  • 10 oz chopped dates
  • 4 cups chopped pecans
  •  1 – 2 cups of large mixed colored candied fruits (green or red cherries)
  • 4 cups of whole pecans
  • orange marmalade jelly (or any jelly of your choice)

Directions:

Step 1

Add 2 cups butter in a food processor and 2 cups packed brown sugar. Mix them well together. Next, add six large eggs and 3 tbsp vanilla extract and mix. Once fully combined, gradually add 2 2/3 cups self-rising flour, 2 tsp apple pie spice, and 1/2 cup grape juice. Next, add a little bit of flour and 3 1/2 cups candied mixed fruit. Mix together, then stir in 4 cups of chopped pecans. Now, add the flour mixture and fold them in together. Set aside.

Step 2

Grease your baking dish with a nonstick cooking spray, then transfer the cake batter. Top your cake with 1 – 2 cups of large mixed-colored candied fruits and 4 cups of whole pecans. Place the cake in a cold oven, set it on bake at 300 degrees F, and bake for 30 minutes. Then, turn oven to 250 degrees and bake for two hours. In the meantime, make the glaze. Heat your jelly in a nonstick pan, then brush it over the top of the cake. Serve and enjoy!
